The Crimson Clover belongs to the family of Legumes. Its small seed (2,5 mm) is
kidney-shaped and beige coloured. Crimson Clover sprouts are ready to be eaten in
7/8 days.
Properties
Crimson Clover sprouts are rich in proteins. They contain vitamins A, group B, C, E
and minerals: Phosphorus, Potassium, Magnesium, Calcium. They have a relaxing
effect on the nervous system, as well as an antispasmodic and blood depurative
power.
Use
Their delicate taste is particularly appreciated in salads, both raw and cooked.

Side dish made with crimson clover sprouts
- 200 gr crimson clover sprouts
- 1 clove of garlic
- 60 gr unsalted butter
- Salt
- Pepper
Brown the garlic in the butter on low flame into a large frying pan; add sprouts and
cook for 3 minutes on high flame.
Serve as vegetables with poached eggs.
